Tough/resilient is still a more positive answer than nearly all the others... except for the gravure girl.
The rest of them sound like they hate themselves. Even Sayumi. It isn't a sign of a healthy psyche if your one word self-description isn't something positive.

I think it's more of the modesty thing Japanese people value. Pointing out something good might be seen as arrogant. That's just my (probably completely wrong) take on it. Also none of their answers were so negative that it gave off the impression of self hate.

As a Zukki fan I'm usually disappointed by her answers for these, but she definitely wins this round.
And yeah, the self-deprecating comments likely have a lot to do with Japanese humility expectations where openly acknowledging your own strengths can be considered "arrogant".
