I might try and work some chord sequences out for some tracks that way people can arrange/play things on guitar etc. as well without needing to read notation.

There are a few, such as Memory Seishun no Hikari, that I enjoy playing but some of the arrangements are just dire.

This video shows a guy playing the song on piano. If you can tell what notes he's playing, you could make your own sheet.
Of course, that's really hard. Instead, I'd just download a .midi of the file and use a .midi making program (which you can get free trials of) to show you the notes for the layers of the midi, and you can weed out the notes you want. I believe I even did that for this song, but the sheet music file is on my computer back at home, which I won't see until December, so... instead, just find a .midi of the song, and use a program like this one.
